Café ProFusion is "A Little Gourmet Hole in the Wall" that is tucked away just off the Main Street in Dillon. Owners Cindy and Bill fell in love with the spices and flavors of the Far East and have brought them here to the High Country. They make their own spice blends, and many of the meals are made the day before to allow time for the flavors to meld. The spices are featured in their soups: New Delhi garbanzo bean soup, carrot ginger soup, tomato lemongrass soup and hot and sour soup. Entrees include chicken in yellow curry, chicken in green curry, pot roast panang and braised baby back ribs. All meals, including the homemade desserts, are gluten-free with delicious vegan and vegetarian options. The dessert selections include ginger cardamom crème brulée, maple star anise mousse, mango passionfruit sorbet, pineapple currant rice pudding and Punjabi coconut ice cream. Delicious nonalcoholic drinks, including Thai iced tea, hot tea and coffee and lassi, are served. Loved dearly by many of the locals, this restaurant does a lot of take-out business and is available for casual catering.

Hotels are permitted to reopen in Summit County beginning June 1st. Short-term rentals remain prohibited under the Colorado public health order. Restaurants can reopen at 50% capacity.
